Vanilla Almond Cupcakes

1/2 cup unsalted butter, softened

1 cup white sugar

4 egg whites

1/2 teaspoon vanilla extract

1/2 teaspoon almond extract

1 1/4 cups all purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1/4 cup whole milk

*Makes 12 cupcakes


1. Preheat oven to 350 degrees Fahrenheit 

2. Mix the butter and sugar together until light and fluffy

3. Add the egg whites, one at a time and mix until well combined

4. Add the vanilla and almond extracts

5. In a separate bowl, mix flour, baking powder, and salt.

6. Add dry ingredients to sugar mixture alternating with milk. (Start and end with dry ingredients)

7. Line cupcake tin with desired liners. 

8. Fill 1/2-3/4 of the way with batter.

9. Bake for 20-25 minutes or until toothpick inserted into the center of the cupcake comes out clean.

10. Let cool completely before frosting!
